Wasabi Egg & Pea Shoot Rollup

 

 

     10       Medium to Large eggs

     ½        cup Wasabi Mayonnaise

                Salt & Pepper to taste

     1         Package (6 pieces) of flat bread

      4        Ounces JONATHAN’S PEA SHOOTS

 

Hard boil the eggs for 10-15 minutes. Cool down immediately in cold running water. Peel and slice lengthwise and crosswise in egg slicer. Add mayonnaise, salt & pepper and mix well. Place ½ cup of the egg mixture in a stripe down the center of the flatbread. Take ½ ounce of pea shoots and snip with scissors into about 1” pieces onto top of the egg. Roll the bread around the egg and pea shoots, centering the ingredients as you roll. Secure with a toothpick.                            Recipe makes 6
