     Sprouty Rollups

10 inch whole wheat flour tortilla

Sunflower Greens, Pea Shoots, Mixed Bean and Alfalfa, Onion, Mung Bean or Deli Sprouts

sliced tomato

sliced cucumber

green and red pepper (julienned)

 

Optional Ingredients:

cheddar, sour cream, feta  or salsa

1. Lay the Sunflower Greens, Pea Shoots and Sprouts on the Tortilla.

2. Add the tomato, cucumber and pepper. 

3. Drizzle with Cucumber Dressing (below).

4. Fold bottom up and fold sides in, leaving top open.

5. Wrap in a serviette and serve.

 

Cucumber Dressing

Great for Roll-ups!

 

¾ cup  plain yogurt (200 grams)

½ tsp.  black pepper (2 ml)

3         cloves crushed garlic

½ tsp. dry mustard powder (2 ml)

1 Tbs. maple syrup (12 ml)

¼ cup  apple cider vinegar (50 grams)

¼        onion, finely chopped

½ tsp.  salt (2 ml)

1  cup  grated, drained cucumber

1 Tbs. dried dill, or fresh chopped   (12 ml)

 

1. Mix all ingredients together except the cucumber and dill.

2. Once mixed, add the cucumber and dill.
