     Soy Bean Sprout Beef Soup

Seasoning sauce:

2  Tbs. soy sauce (24 ml)

2  Tbs. cooking sake (24 ml) [i]

1  Tbs. sesame oil (12 ml)

½ clove garlic (grated)

    pepper as desired

 

Other ingredients:

4 oz.   beef (thinly sliced) (100 grams)

8 oz.   Soy Bean Sprout (200 grams)

½ tsp.  salt (2 ml)

½        bunch green onions

1Tbs.  sesame oil (for separate use) (12 ml)

          white roast sesame [ii] as desired

 1. Mix the seasoning ingredients together: soy sauce, cooking sake, sesame oil (first Tbsp.), grated garlic, and pepper. Slice the beef about ½ cm (about ¼ of an inch) thick. Marinate the beef in the seasoning sauce.

 2. Rinse Soy Bean Sprouts and place in pot. Add 2 cups (250 ml) of water and salt. Close lid and turn heat on. When you start to smell the bean sprout aroma, remove from heat. DO NOT open the lid of the pot.

 3. Spread the other Tbsp. of sesame oil into different pot. Heat up. Stir fry marinated beef (step 1) in this pot. When browned, add 4 cups (500 ml) of water and bring to a boil. Add all ingredients from step 2 into this pot. Taste. If necessary, add salt, soy sauce or pepper to taste.

 4. Diagonally slice green onion to about 3 cm (about 1 inch) length. Add desired amount of green onions to each serving bowl. Sprinkle sesame on top.              Recipe Serves 4

 

[i] In Japanese cooking, what is called Cooking Sake is used for flavouring.

[ii] There are two types of sesame: black and white. In this case, the white roasted sesame is needed.
