Sautéed Pea Shoots
 
1     tablespoon good olive oil
1     tablespoon butter 
6    ounces JONATHAN'S ORGANIC 
      PEA SHOOTS
      Salt & pepper to taste
 
note: The use of a little olive oil in a pan
with butter allows the temperature to be 
higher without burning the butter.

Heat olive oil and butter in a medium sized skillet. Toss in pea shoots and let cook in oil and butter, flipping gently with a spatula until lightly sautéed.                                                                              Recipe makes 2 servings.

 

Sautéed Pea Shoots can be placed on top of broiled fish or meat, used as a bed under scallops or shrimp, or eaten just as they are.
