Munchin’ Mix Stuffed Chicken

 

      1        fresh large roasting chicken

      ½       cup mushrooms, coarsely chopped

      2        onions, finely chopped

      4        ounces JONATHAN’S MUNCHIN’  MIX

      6        tablespoons butter or a good olive oil

      2        cups broth

      8        ounce bag stuffing mix

      ½       teaspoon salt

      ¼       teaspoon black pepper

      2        tablespoons fresh chopped parsley

      1        teaspoon fresh chopped rosemary

To make stuffing, simmer mushrooms, onion and MUNCHIN’ MIX in butter or oil in a frying pan for 2 to 3 minutes, until onions are translucent. Remove from heat, add the remaining ingredients and mix thoroughly. Preheat oven to 450F. Clean chicken, dry with clean towels. Stuff chicken and tie the opening shut. Roast chicken for 15 minutes at 450F., then turn oven down to 350F. and continue to cook until chicken is thoroughly cooked.

 

Stuffing can also be inside a rolled flat fish such as filet of sole, stuffed sweet peppers, stuffed cabbage, or whatever you are serving that will be enhanced with stuffing

 

Recipe stuffs a large chicken or small (10 – 12 pound) turkey

This recipe can also be baked in a covered casserole for 45 minutes at 350oF. The combination of the MUNCHIN’ MIX and the grain makes a complete protein for a vegetarian entrée.
