1/2 Tablespoon olive oil 1 Stalk celery, thinly sliced 1 Small onion, chopped (1/2 cup) 4 Ounces Jonathan's Munchin' Mix 1/2 Cup vegetable broth 1/8 Teaspoon pepper 1/2 Teaspoon brown mustard 1 Tablespoon fresh parsley, finely chopped
Heat oil in saucepan, add celery and onion. Stir and cook over medium heat; don't brown, just sweat the vegetables. Add remaining ingredients except parsley. Bring to a boil, lower heat to a simmer and cover. Cook 15 minutes. Serve garnished with parsley. Recipe serves 2 |
