Heat vegetable oil in a large skillet or wok. Add onion, garlic, celery, mushrooms, baby soy sprouts, Bok Choy and pea shoots. Stir-fry 5 minutes. Add the rice and soy sauce. Cook until rice is heated, and serve. Recipe makes 4 main course servings or 8 side dishes |
