Broccoli Topped Egg Salad
 
 
 
Hard boil, for 10 minutes, eggs: approximately 
one per sandwich you wish to make. Cool eggs 
quickly to make it easier to peel them. Peel
and chop eggs into bowl. Add mayonaise, salt, 
pepper and a spice such as Wasabi sauce, 
mustard or curry to taste. Mix thoroughly.
Spread on your favorite bread, lightly toasted 
(this is our favorite walnut raisin bread). Top each 
sandwich with a generous handful of broccoli 
sprouts. These sandwiches can be eaten 
"open face" or topped with a second slice of bread.
