BEANSPROUT WRAP

 

      1        tablespoon olive oil

      1        small red onion, sliced

      2        small carrots thinly sliced

      1        large stalk celery, sliced

      8        ounces mushrooms, sliced

      5        ounces JONATHAN’S Beanspourts

      2        ounces JONATHAN’S Pea Shoots cut in half

      1        cup cheddar cheese, shredded

      2        large whole wheat wraps

 

Heat oil in a fry pan or wok on high, add onion and stir fry 1 minute. Add carrot and celery and stir fry 2 minutes. Add mushrooms and stir fry 1.5 minutes. Add Beansprouts and Pea Shoots and stir fry 1.5 minutes. Add cheese. Turn off heat. Cover pan until cheese is melted. Divide mixture in half and place on the bottom end of each wrap. Roll, cut each wrap in half and serve.      Serves 2
