     Bean Sprout Galette

Recipe created by Mrs. Sumiyo Kawakami from Antonkarl Co., Ltd., Tokyo, Japan

Served at the International Sprout Growers Convention in Chicago, IL, USA - 2010

 

 

 

 

    Potatoes ------------------- 1 kg (2lbs)

    Butter ---------------------- 70 g (2.5oz)

    Sliced onion ---------------- 1 

    Bean sprouts -------------- 500 g (1lb)

    Bacon ----------------------- 50 g (2oz)

    Kaiware daikon------------ 1 pack

1.      Boil potatoes and mash.

2.      Melt 30g (1oz) butter in a pan and fry the onions and bacon.

3.      Add the bean sprouts and fry them.

4.      Add 40g (1.5oz) butter and mashed potatoes, then add salt and pepper to taste.

5.   Blend the potato mixture in the pan to make the galette

5.      Cook the galette for 5 minutes until the bottom is golden brown.

6.      Bake in oven at 200 ºC (400ºF.) for 15 minutes.

7.      Decorate with kaiware daikon greens (or other microgreens or sprouts as available)
