Amazing Beansprout Rice Salad

 

   

2       cups brown rice, cooked in 3 cups of water
         until water is absorbed (45 - 60 minutes)
1/3    cup olive oil
3       tablespoons sesame oil
1/2    cup orange juice
1       clove fresh garlic, minced
1/2    teaspoon crushed red pepper
2       tablespoons tamari
1       teaspoon salt
2       tablespoons cider vinegar
1       cup pineapple, chopped (or canned, crushed, undrained)
10     pea pods, cut in quarters
3      scallions (whites and greens), thinly sliced
1      stalk celery, thinly sliced
1/2   cup raisins
1/2   cup peanuts
12    ounces JONATHAN'S BEANSPROUTS

While rice is cooking, combine all other ingredients in a large mixing bowl. Add hot rice, mix well and chill.

 

Recipe serves 6. One serving is 2 cups.
